Description

The recipe starts by blending shrimp with scallions, ginger, egg white, soy sauce, sesame oil, salt, and white pepper into a smooth paste. This paste is spread evenly over six pieces of toast. The paste side is then pressed onto a plate of sesame seeds to coat thoroughly. Each piece is cut into four triangles for easier handling and frying.

Cooking can be done either by pan-frying in enough oil to cover the surface or by air-frying. Pan-frying requires heating oil to the correct temperature before placing the sesame seed side down first, flipping when golden and frying until the other side is browned. Air-frying follows similar timing without submerging in oil.

The dish is a flavorful savory snack or appetizer combining the natural sweetness of shrimp with garlic and ginger notes, enhanced by the toasted sesame seed crust. For the shrimp

  • 225 g Shrimp about ½ lb, raw, peeled and deveined; aka prawn
  • 1 egg white
  • 1 talk scallion finely chopped; aka spring/green onion
  • 1 teaspoon ginger julienned
  • 1 teaspoon soy sauce light
  • 1 teaspoon sesame oil
  • teaspoon salt
  • 1 pinch ground white pepper

You also need

  • 6 pieces toast
  • 6 tablespoon sesame seeds
  • neutral cooking oil see note 1

Instructions

Make the shrimp paste

  1. Put all the ingredients for the shrimp into a blender or a food processor. Blend on medium speed until they turn into a fine, sticky paste.

Assemble the toast

  1. Roughly divide the paste into 6 equal parts. Spread one portion onto a piece of toast, right to the edges (see note 1).
  2. Put sesame seeds onto a flat plate. With the shrimp paste side down, place the toast over. Gently press with your fingers to ensure sesame seeds are firmly stuck to the paste. Repeat to finish all pieces.
  3. On a chopping board, cut each piece of toast twice diagonally into 4 triangles.

Fry the toast (see note 2)

  1. Option #1 Pan-frying: Heat up oil (enough to cover the surface) in a pan over medium heat. When the oil is hot enough (use a sesame seed to test. It’s ready if the seed spins around quickly), put in the triangle pieces with the sesame seed side facing down. Flip over when the first side becomes golden. When the other side browns, remove it from the pan.
  2. Option #2 Air-frying: Preheat the air fryer at 240°C/460°F for 3 mins. Brush a thin layer of oil over both sides of the toast. When the air fryer is ready. Place in a single layer over the crisper tray with the sesame side facing up. Cook for around 3 mins until it browns.

Notes

  • Leaving the crust on the toast is traditional, but trimming is optional based on preference.
  • Deep-frying at 190°C/375°F is the classic method for extra crispness if desired.
