This recipe combines wild-caught shrimp with a homemade sweet and spicy Thai-inspired chili sauce. Description

The homemade sweet and spicy chili sauce blends rice vinegar for tang, honey for sweetness, and soy sauce for saltiness, balanced with minced garlic, chopped Thai chilis, and red pepper flakes for heat. Simmering these ingredients and thickening with a cornstarch slurry results in a sauce with a sticky, glossy consistency. This sauce can be stored refrigerated for up to two weeks, preserving its robust flavor.

The shrimp is prepared by soaking it in cold water, then draining to ensure cleanliness and optimal texture. Stir-fry noodles and spiralized carrots are cooked in a hot pan with oil and soy sauce to develop slight caramelization. The noodles can be stir-fried additionally with the sweet and spicy chili sauce to increase the dish's heat and flavor tie-in. Once components are cooked, the shrimp, noodles, and vegetables are combined with portions of the sauce to create a cohesive meal prep ready dish.

Sweet and Spicy Thai Sauce

  • 1/2 cup rice vinegar
  • 3/4 cup water
  • 1/2 cup honey
  • 2 tbsp soy sauce
  • 5-7 cloves garlic minced/chopped finely
  • 4-5 Thai chilis seeds removed, chopped
  • 2 tsp red pepper flakes
  • 1 tbsp cornstarch plus 1 tbsp water to make a slurry

Shrimp Meal Prep

  • 2 bags Shrimp 680 grams, wild caught, Argentinian, Marina Del Rey's
  • 300 grams stir fry noodles
  • 2 carrot spiralized
  • 4-5 tbsp Thai sauce sweet and spicy

Instructions

How To Make The Sauce:

  1. In a small pot, add all your ingredients expect for the cornstarch slurry and bring it to a boil. Let the mixture simmer for 7-10 minutes, stirring occasionally.
  2. Add in the cornstarch slurry and continue to let the mixture simmer until it has thickened. The sauce will continue to thicken once it’s cooling so be sure to not let it cook down too much.
  3. Store in an airtight container and in the fridge once it has cooled down for up to two weeks.

Shrimp Meal Prep

  1. Following the instructions on the bag of the shrimp, soak the shrimp in cold water for ten minutes and then let it drain for two. 
  2. While the shrimp was soaking and draining, cook your stir-fry noodles. I used 3 minute chow mein noodles. In a large hot pan, added a tbsp of oil, a tbsp of soy sauce, and stir fried it along with some spiralized carrots. Optional: you can also stir fry the noodles in the sweet and spicy thai chili sauce as well to add more heat to the overall dish.
  3. Once the noodles are done and set aside, add the sweet and spicy Thai chili sauce into the hot pan and placed my shrimp into the pan. Careful not to overcrowd the pan. Sauté the shrimp until pink and opaque.
  4. Serve the shrimp together with the noodles and a side of green beans if desired.
