Silver Legacy Casino Seafood Pan Roast

The Silver Legacy Casino Seafood Pan Roast is a rich medley of shrimp, scallops, oysters, crabmeat, mussels, and clams simmered in a seasoned buttery sauce with white wine, clam juice, cocktail sauce, and spices. The cooking process opens the shellfish and infuses the broth with savory seafood flavors, culminating in a creamy finish from added whipping cream and butter, garnished with chives. This dish offers a luxurious combination of textures and a well-seasoned, smooth sauce.

Description

Starting with melting butter in a hot pan or double boiler, this seafood pan roast builds layers of flavor by adding white wine, clam juice, cocktail sauce, celery seed, Worcestershire sauce, paprika, Tabasco, lemon juice, salt, and pepper. Shellfish such as mussels and clams are cooked until they open, unlocking their briny juices into the sauce. Subsequently, shrimp, scallops, and crabmeat are incorporated and the mixture is brought to a full boil.

Finishing with whipping cream and additional butter accentuates the richness of the broth, creating a velvety sauce that coats the diverse seafood. The garnish of chives adds a fresh herbal note. The dish is served hot to highlight the blend of tender shellfish and the deep, layered sauce.

This pan roast is suitable for a sharing entrée or an indulgent seafood meal featuring a variety of textures from firm shrimp and scallops to soft oysters and crab meat, complemented by the slight heat and tang of cocktail sauce and sauces with Worcestershire and Tabasco.
