Simple Airfryer Turkey Dinner

The Simple Airfryer Turkey Dinner features a seasoned bone-in, skin-on turkey breast cooked in an airfryer alongside a sweet potato kale salad tossed with cashews and cranberries. The turkey is marinated with olive oil, lemon, garlic, and herbs, resulting in a flavorful roast with crisped skin. Meanwhile, the salad combines roasted sweet potatoes, tender kale, crunchy cashews, and tart cranberries with a lemony dressing to complement the meat.

Description

This dinner begins by roasting diced sweet potatoes seasoned with olive oil, garlic powder, salt, and pepper in the airfryer. The turkey breast is then brushed with a mixture of olive oil, lemon juice, minced garlic, black pepper, salt, rosemary, thyme, mustard powder, and a pinch of paprika before being airfried in two stages to ensure even cooking and skin crispness.

Massaging the kale with olive oil softens the leaves before mixing them with roasted sweet potatoes, cashews, cranberries, and a lemon-garlic dressing. The result is a hearty, balanced meal highlighting tender, juicy turkey against a vibrant, textured salad.

A meat thermometer is recommended to confirm the turkey reaches an internal temperature of 165°F (74°C) for food safety. This dish provides a straightforward approach to cooking turkey and a nutrient-packed side using airfryer convenience and simple ingredient combinations.
