This Simple Avocado Bacon Corn Chicken Salad is perfect summer salad. Easy to put together and super versatile, make this salad for your next bbq!

Ingredients

  • 3-4 cups chicken leftover, shredded
  • 5-6 trips Bacon
  • 2 cups corn frozen
  • 2-3 tbsp butter
  • 2 tsp sweet paprika or smoked paprika
  • 1-2 avocado
  • 2 tbsp olive oil
  • 1 lime juiced
  • 1/2 tsp salt

Instructions

For the Corn

  1. On a sheet pan, spread out the frozen corn kernels in a single layer, sprinkle on the paprika, and place the divided up butter evenly across the corn.
  2. Roast in a 400F oven for 20-30 minutes or until it has crisped up, making sure to stir it every 5-10 minutes.

For the Bacon

  1. On a sheet pan, evenly space out the bacon in a single layer and bake for 15-18 minutes, until crispy.

Putting it All Together

  1. In a large bowl, combine the shredded chicken, bacon, corn, and avocado.
  2. Combine olive oil, lime juice, and salt before drizzling it onto the salad. Toss to combine.
  3. Serve immediately.
