Simple Cucumber and Tomato Salad
Description
This straightforward salad mixes fresh diced cucumbers, halved or quartered cherry tomatoes, and thin slices of red onion. The dressing blends avocado oil or olive oil, balsamic vinegar, lemon juice, Italian seasoning, minced garlic, salt, and black pepper for a flavorful seasoning that unifies the ingredients.
The combination offers a crunchy texture with the cucumbers and onion complemented by the sweet acidity of tomatoes and tangy dressing. It's an easy-to-make side dish highlighting freshness and lightness.
For best results, serve chilled and consume within a few days as leftovers will keep in the refrigerator for up to 3 days. Variations include substituting different small tomatoes or onion types, and using alternative oils or vinegars based on availability.
Ingredients
- 6 small cucumber diced (or one large English cucumber
- 1- pint tomatoes sliced in half or quartered, cherry or grape
- 1/2 red onion thinly sliced, also called purple onion
Dressing:
- 2 Tablespoon avocado oil or Olive oil
- 2 Tablespoon balsamic vinegar
- 1 lemon juiced
- 1 Tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 garlic minced, clove
Instructions
- Add the cut-up tomatoes, cucumbers, and onion into a large bowl
- In a small bowl, add all of the dressing ingredients, mix and pour over the bowl of veggies.
- Mix until combined and serve. Enjoy.
Notes
- Store leftovers in a covered container in the fridge for up to 3 days and serve cold.
- Freezing is not recommended as the vegetables lose texture.
- Cherry or grape tomatoes work best, but vine-ripened tomatoes can also be used.
- Red onion is preferred for flavor, but sweet white onion is an acceptable alternative.
- Avocado or olive oil are ideal; grapeseed oil can be used if necessary.
- Balsamic vinegar is suggested for the dressing; red wine vinegar is an acceptable substitute.
- If Italian seasoning is not available, a blend of dried parsley, basil, oregano, thyme, and rosemary can be used.
