Ingredients

  • 3 cups old-fashioned rolled oats
  • 2/3 cup shredded coconut unsweetened
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or dried fruit raisins, cranberries, blueberries.

Instructions

  1. Preheat your oven to 300°F (150°C). Line a large baking sheet with aluminum foil or parchment paper.
  2. In a large mixing bowl, mix the rolled oats and shredded coconut together.
  3. In a separate microwave-safe bowl or on the stovetop in a small sauce pan, warm the maple syrup and coconut oil until they have melted. Remove the pan from the heat and whisk in the vanilla extract, ground cinnamon, and salt.
  4. Pour the wet mixture over the dry oat and coconut mixture. Use a fork, spatula or your hands (once the maple syrup has cooled) making sure the oats are evenly coated.
  5. Spread the rolled oats mixture in a single layer evenly onto the prepared baking sheet.
  6. Bake in the preheated oven for about 25-30 minutes, stirring halfway through, or until the granola is golden brown and toasted. Keep a close eye on it to prevent burning.
  7. Remove the baking sheet from the oven and let the granola cool completely on the sheet. It will continue to crisp up as it cools.
  8. Fold in the chocolate chips or dried fruit into the cooled granola.
  9. Transfer the nut-free granola to an airtight container for storage.

Notes

  • If you are melting your coconut oil on the stovetop watch it closely. You don't want it to come to a boil you just want it melted and smooth.
  • Try to get your granola in an even layer on your baking sheet. Use two if you need them. The even layer allows it to cook quickly.
  • Let it sit! When you first take your granola out of the oven it won't be completely crunchy yet, but as it cools and sits it will continue to crisp up.
