Ingredients

The Salad:

  • 100 g arugula
  • 100 g baby leaf mix
  • 1 cup radish sliced
  • ½ cup onion chopped
  • ½ cup Parmesan Cheese grated

Dressing:

  • 5 tablespoons olive oil
  • ½ tablespoon Dijon mustard
  • ¼ cup Parmesan Cheese grated
  • 1 teaspoon garlic powder
  • salt to taste
  • black pepper to taste

Instructions

  1. Place your lettuce, radish and onion into a salad bowl.
  2. In a smaller bowl, whisk together 3/5 of the olive oil, mustard, Parmesan cheese and pepper.
  3. Add in your garlic powder and remaining olive oil.
  4. If the dressing is too thick, you can either add in extra olive oil or some water to your desired consistency.
  5. Divide the salad up into individual servings. Top with the dressing and remaining Parmesan cheese.
