Simple Shepherd's Pie features lamb browned with onions and simmered in a gravy made from beef bouillon, gravy mix, Worcestershire sauce, and basic seasonings. The meat forms a savory base, moist and flavorful from simmering, while the mashed potatoes, prepared with butter and half-and-half, provide a creamy contrast on top. The optional addition of shredded cheddar adds a slightly sharp richness to the topping.

The recipe offers flexibility in portioning, allowing the pie to be assembled in individual ramekins or as one large dish, making it adaptable for serving size or presentation preferences. The careful simmering step ensures that the gravy thickens and concentrates flavor before baking.

Mashed potato quantity can be adjusted to personal taste, and leftover mashed potatoes can be used for other recipes.   • 1 tsp beef bouillon or one OXO beef bouillion cube, Better Than Bouillon brand
  • 2 Tbsp olive oil
  • 16 oz lamb if you use ground beef -it's a cottage pie, ground
  • 1 medium onion (diced)
  • 1 Tbsp gravy mix Bisto brand
  • ½ tsp Worcestershire sauce
  • ¼ tsp salt
  • 1 dash black pepper

To top the meat:

  • 5 large potato mashed, made with butter and half and half- see notes
  • 1 handful cheddar cheese optional, shredded

Instructions

  1. Sauté the diced onion for a few minutes over medium high heat, stirring occasionally. Close the lid for another few minutes, and continue to cook.
  2. Once the onion is translucent, and just starting to brown, add the ground beef and break the pieces up into smaller bits. Stir often, and continue to cook until the liquid starts to dry (if not using Bisto, add a tablespoon of flour at this time).
  3. Add enough water, just to almost cover the ingredients, and simmer. At this point, add salt, Beef Better than Bouillon (or one OXO cube), Bisto granules, Worcestershire Sauce, and some ground black pepper to taste.
  4. Now, preheat oven to 375ºF (190ºC).
  5. Continue to simmer the meat over medium heat for about 5-10 minutes, then taste; if needed, add more salt or Bisto. Remove from heat.
  6. Ladle the beef and gravy into oven safe ramekins or bowls, to make individual Cottage Pies, or just one large dish. Spoon (or pipe) mashed potatoes onto each dish to cover completely. Add shredded Cheddar cheese on top, if desired.
  7. Place dishes/ramekins onto a rimmed baking sheet and bake until bubbly and the potato is browned a little, approximately 25-30 minutes.

Notes

  • Adjust the mashed potato amount based on your preferred topping thickness.
  • Leftover mashed potatoes can be repurposed into other dishes like potato scones or croquettes.
  • Gluten-free adaptations can be made by omitting the gravy mix, but check bouillon ingredients for gluten traces.
