Description

To make Simple Strawberry Sauce, quartered strawberries are combined with granulated sugar, cornstarch for thickening, a pinch of salt, and fresh lemon juice in a saucepan. Cooking over medium-low heat releases the strawberries' juices, turning the mixture into a liquid base. Bringing it to a boil activates the cornstarch, thickening the sauce as it simmers. Removing from heat, vanilla extract can be stirred in to add depth and enhance the natural strawberry sweetness.

The result is a syrupy sauce that retains some berry texture while providing a glossy, balanced sweetness marked by bright lemon notes. This sauce accompanies breakfasts and desserts alike, complementing items that benefit from fruity acidity and a sweet finish.

Omitting cornstarch results in a looser sauce requiring longer cooking to reduce. The vanilla is optional, allowing for customization of flavor from pure fresh strawberry to aromatic vanilla-scented.

  • 1 lb strawberries tops removed and quartered
  • cup granulated sugar
  • 1 ½ Tablespoons cornstarch
  • teaspoon salt
  • 1 Tablespoon lemon juice
  • ½ teaspoon vanilla extract optional

Instructions

  1. Combine strawberries, sugar, cornstarch, salt, and lemon juice in a medium-sized saucepan.
  2. Cook over medium/low heat until berries release their juices (about 5 minutes or so, mixture should be very liquidy).
  3. Bring mixture to a boil and boil for one minute, stirring constantly.
  4. Reduce heat to low and simmer until thickened, about 5 minutes (keep in mind sauce will continue to thicken after cooling).
  5. Remove from heat and stir in vanilla extract, if using.
  6. Allow to cool before serving (over ice cream, pancakes, biscuits, etc.!)

Notes

  • Omitting cornstarch results in a looser sauce that requires longer cooking (about 15+ minutes) to thicken adequately.
  • Vanilla extract is optional; adding it gives a subtle flavor contrast, but leaving it out emphasizes strawberry freshness.
