Sinfully Rich Fudge Brownies
Description
This brownie recipe starts by melting unsalted butter and finely chopped unsweetened chocolate together to form a smooth base. Sugar and a pinch of salt are stirred in, followed by eggs and vanilla which provide moisture and flavor. Cake flour is sifted in to maintain a delicate crumb that prevents the brownies from becoming cakey. Mixing in bittersweet chocolate chips adds texture and extra chocolate pockets throughout.
The batter is poured into a greased 8-inch square glass baking dish and spread evenly. Baking at 350°F for about 30 minutes allows the brownies to develop a slightly crisp top while remaining fudgy inside. A toothpick inserted in the center should come out with a few moist crumbs to avoid dryness. Cooling completely before cutting helps the brownies hold their shape.
Ingredients
- 1/2 cup butter cut into cubes, unsalted
- 3 oz. unsweetened chocolate , finely chopped
- 1 cup sugar
- Pinch salt
- 2 egg at room temperature, large
- 1 teaspoon vanilla extract
- 3/4 cup cake flour
- 3/4 cup bittersweet chocolate chips these brownies work wonderfully with white chocolate chips or even peanut butter chips as well, or semisweet chocolate chips
Instructions
- Preheat the oven to 350 F. Grease a 8 inch square baking dish. Glass is preferred.
- Combine the butter and chopped unsweetened chocolate in a saucepan over low heat. Stir often until melted, 4-5 minutes. Remove the saucepan from the heat and stir in the sugar and salt. Add the eggs and vanilla extract and stir until thoroughly blended. Sift the flour over the mixture and gently stir just until combined. Be careful not to over-stir. Stir in the chocolate chips.
- Pour the batter into the prepared baking dish and spread evenly with a rubber spatula. Bake the brownies for about 30 minutes, or until a toothpick inserted into the center comes out mostly clean. Be careful not to over-bake or the brownies will be dry. If you're using a metal baking dish you may need to bake it longer. Transfer the dish to a wire rack to cool completely, then cut into squares.
