Single Serve Chocolate Chip Cookie - Gluten Free
Description
Single Serve Chocolate Chip Cookie - Gluten Free blends coconut oil and brown sugar for moistness and sweetness in a gluten-free batter featuring Cup 4 Cup flour. Including egg yolk and baking soda produces a delicate rise and chewy texture. After mixing the ingredients thoroughly, the dough is portioned into two large balls to provide a cookie with soft insides and slightly crisp edges upon baking. The use of Enjoy Life chocolate chips ensures the entire treat remains gluten-free. Baked at 375 degrees Fahrenheit, the cookie can be checked at 8 minutes to adjust for preferred softness or crispness.
Ingredients
- 2 tablespoon coconut oil
- 2 tablespoon brown sugar
- ¼ teaspoon vanilla
- 1 egg yolk
- ¼ cup gluten free flour brand Cup 4 Cup
- ¼ teaspoon baking soda
- salt pinch
- 2-3 tablespoon chocolate chips I used Enjoy Life, gluten-free
Instructions
- Preheat oven to 375°.
- Put coconut oil in the microwave for a few seconds just to soften it - do not melt.
- Stir in sugar, vanilla and egg and mix well.
- Add remaining ingredients and mix well.
- Roll into two large balls and place on a parchment-lined baking sheet.
- Bake for 8 minutes and check. Bake for a few minutes more for a crispier cookie. I like mine soft in the middle.
