  • 2 tablespoon coconut oil
  • 2 tablespoon brown sugar
  • ¼ teaspoon vanilla
  • 1 egg yolk
  • ¼ cup gluten free flour brand Cup 4 Cup
  • ¼ teaspoon baking soda
  • salt pinch
  • 2-3 tablespoon chocolate chips I used Enjoy Life, gluten-free

Instructions

  1. Preheat oven to 375°.
  2. Put coconut oil in the microwave for a few seconds just to soften it - do not melt.
  3. Stir in sugar, vanilla and egg and mix well.
  4. Add remaining ingredients and mix well.
  5. Roll into two large balls and place on a parchment-lined baking sheet.
  6. Bake for 8 minutes and check. Bake for a few minutes more for a crispier cookie. I like mine soft in the middle.
