Sipo Egg Recipe

Sipo Egg Recipe combines boiled quail eggs with shrimp, ham, and fresh vegetables like carrots, green peas, and singkamas in a creamy sauce thickened with cornstarch. The shrimp is cooked first to infuse flavor into the butter and oil before sautéing garlic, onion, and other ingredients. The final dish is gently simmered to meld the creamy sauce with the savory proteins and vegetables, resulting in a rich, comforting dish often served warm.

Description

Sipo Egg Recipe features tender quail eggs and cooked shrimp paired with diced ham, carrots, green peas, and singkamas (Mexican turnip), all brought together in a creamy sauce made with all-purpose cream. The shrimp is pan-cooked in butter and oil to develop flavor, then set aside. Garlic and onion are sautéed in the same pan before adding the vegetables and ham. After simmering the mixture until the carrots are nearly tender, the quail eggs, shrimp, and singkamas are added along with cream. The sauce is then thickened with a cornstarch slurry, producing a smooth and velvety texture that coats the ingredients well. This dish is served warm, highlighting its rich and savory qualities.

Ingredients

Servings
  • 24 pieces quail egg boiled and shelled, fresh
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 cup Shrimp
  • 2 cloves garlic - minced
  • 1 small onion - chopped
  • 1 medium carrot cubed
  • 1 cup green peas
  • 1 cup ham cubed, cooked
  • 250 ml all-purpose cream or heavy whipping cream
  • 1 medium singkamas cubed, mexican turnip
  • salt
  • black pepper
  • 2 teaspoons cornstarch - dissolved in ½ cup water

Instructions

  1. In a pan, heat butter and oil over medium heat. Cook the shrimps until all sides are done. Remove the shrimps from butter and set aside.
  2. In the same pan with butter, saute garlic and onion until tender. Next, add the carrots and green peas. If using canned green peas then this should be added at the end. Mix in the ham and cook for 2 minutes. Add ½ cup of water, cover and let simmer until carrots are almost cooked.
  3. Add the quail eggs, shrimp and singkamas or kohlrabi then pour in the all-purpose cream and stir. Season with salt and peppers and let it simmer under medium heat for about 3 minutes.
  4. Add the cornstarch mixture and mix for about another 2-3 minutes or until the sauce thickens.
  5. Serve warm and enjoy.
