Skillet Cajun Spiced Fish with Tomatoes

This recipe offers flaky white fish fillets gently cooked in a skillet with a vibrant sauce made from ripe tomatoes, diced green peppers, onions, garlic, and seasoned with Cajun spices. The blend of fresh vegetables softens into a flavorful base that complements the mild fish. The dish is cooked covered to ensure tender, moist fish with a lightly spiced, tomato-based topping. It's an approachable way to prepare seafood with a hint of Cajun seasoning and fresh vegetable components.

Description

Skillet Cajun Spiced Fish with Tomatoes features white fish fillets such as flounder or tilapia simmered in a sauce of chopped tomatoes, green bell peppers, onions, and garlic with a Cajun seasoning blend. Cooking the vegetables first softens them and creates a bright, mildly spiced tomato bed. The fish is then layered into the sauce and cooked covered, allowing it to gently steam until it flakes easily. This process keeps the fish tender and infuses it with the seasoning and vegetable flavors.

The final dish presents tender fish with a rich, chunky tomato and pepper sauce which balances the mildness of the fillets with the smoky, spicy notes of Cajun seasoning. The textures merge into a comforting yet fresh-tasting meal.

Skillet Cajun Spiced Fish pairs well with simple sides like rice or crusty bread, which can soak up the flavorful sauce. Serving it immediately ensures the fish remains moist and the sauce vibrant.

As noted, canned diced tomatoes can be substituted for fresh, making this recipe easy to prepare year-round. Cooking times are approximate; fish is done when it flakes easily with a fork.
