Skillet Gnocchi with Bacon, Tomatoes, and Spinach

Ingredients
- 2 Bacon cut into small pieces
- 1 tbsp butter divided
- ¼ yellow onion small, sliced
- 1 (12 oz) skillet gnocchi bag
- 1 grape tomatoes handful
- 1½ cups baby spinach
- 2 garlic cloves, minced
- crushed red pepper flakes pinch
- salt sea salt and freshly cracked, to taste
- black pepper sea salt and freshly cracked, to taste
- Parmesan Cheese fresh, grated
Instructions
- Cook the bacon bits in a cast iron skillet over medium heat until golden brown; remove from the skillet and place on a paper towel to drain the grease. Discard the bacon grease from the skillet.
- Melt half of the butter in the same skillet over medium-high heat. Add the onion and cook, stirring often, for 3-4 minutes.
- Add the remaining butter, skillet gnocchi and tomatoes then cook, stirring occasionally for 4 minutes.
- Add the baby spinach, minced garlic and crushed red pepper flakes. Cook, stirring constantly, for 1-2 minutes or until the spinach is wilted.
- Season with sea salt and freshly cracked pepper, to taste. Serve immediately with fresh parmesan on the side. Enjoy.
