Skillet Lasagna Recipe with Rotini

This skillet lasagna recipe with rotini is an easy family dinner that only takes 30-ish minutes and ONE POT to make! It's comforting and much easier than making a traditional lasagna!

Ingredients

  • 1 Tbsp. olive oil
  • 1/2 white onion, diced
  • 1 cup white mushrooms, chopped (about 5-6 mushrooms)
  • 1 red bell pepper, diced
  • 1 lb. ground turkey
  • 2 cloves garlic, minced
  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 24 oz. red pasta sauce
  • 1/2 cup chicken broth (or water)
  • 2 cups rotini, dry
  • 1 1/2 cups mozzarella cheese, freshly shredded
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 cup ricotta cheese
  • 1 Tbsp. fresh parsley, minced
  • 1 Tbsp. freshly basil, minced

Instructions

  1. Heat olive oil in a large skillet over medium high heat.
  2. Add in diced onion, mushrooms, bell pepper, ground turkey, garlic and seasonings.
  3. Cook, stirring occasionally, until ground turkey is no longer pink, about 5-7 minutes. Drain any excess liquid/grease from pan and return to heat.
  4. Add in pasta sauce, chicken broth and rotini pasta. Stir. Bring to a boil. Cover, reduce heat to a simmer and cook for 10-15 minutes or until pasta is cooked.
  5. Stir in mozzarella and parmesan cheese. Taste and season with more salt and pepper, if needed. Turn off heat.
  6. In a small bowl, stir chopped parsley and basil into ricotta.
  7. Serve pasta with a dollop of ricotta mixture on top and enjoy immediately.

Notes

  • Can use ground beef or Italian sausage instead of ground turkey too!
