For the steak bites:

  • 1 lb sirloin steak or ribeye cut into bite-sized pieces
  • 2 tablespoon olive oil
  • 2 tablespoon butter
  • 3 cloves garlic minced
  • salt and pepper to taste

For the garlic Parmesan sauce:

  • 8 oz rotini pasta
  • 2 tablespoon unsalted butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions

Cook the rotini pasta:

  1. Bring a large pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water for the sauce.

Cook the steak bites:

  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the steak bites to the skillet in a single layer, cooking for 4-5 minutes, stirring occasionally, until browned and cooked to your desired doneness.
  3. Remove the steak from the skillet and set aside. In the same skillet, melt 2 tablespoons of butter. Add the minced garlic and sauté for 1 minute, until fragrant.

Prepare the garlic Parmesan sauce:

  1. In the same skillet, add the heavy cream, and bring it to a simmer over medium heat. Stir in the grated Parmesan cheese and Italian seasoning.
  2. Let the sauce cook for 3-4 minutes, stirring constantly, until it thickens. If the sauce is too thick, add the reserved pasta water a little at a time until you reach the desired consistency.
  3. Season with salt and pepper to taste.

Combine the pasta and steak:

  1. Add the cooked rotini pasta to the skillet with the garlic Parmesan sauce and toss to coat the pasta in the sauce.
  2. Add the cooked steak bites back into the skillet and stir to combine, heating through for 2-3 minutes.

Serve:

  1. Garnish with fresh parsley if desired, and serve immediately.

Notes

  • For a leaner option, use chicken breast or shrimp in place of the steak.
  • You can add vegetables like spinach, sun-dried tomatoes, or mushrooms to the sauce for added flavor and nutrition.
  • If you prefer a spicier version, add red pepper flakes to the sauce.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of cream or broth.
