For the steak bites:
- 1 lb sirloin steak or ribeye cut into bite-sized pieces

For the garlic Parmesan sauce:
- 8 oz rotini pasta
- 2 tablespoon unsalted butter
- 3 cloves garlic minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- salt and pepper to taste
- Fresh parsley for garnish optional

Instructions
Cook the rotini pasta:
- Bring a large pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water for the sauce.
Cook the steak bites:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the steak bites to the skillet in a single layer, cooking for 4-5 minutes, stirring occasionally, until browned and cooked to your desired doneness.
- Remove the steak from the skillet and set aside. In the same skillet, melt 2 tablespoons of butter. Add the minced garlic and sauté for 1 minute, until fragrant.
Prepare the garlic Parmesan sauce:
- In the same skillet, add the heavy cream, and bring it to a simmer over medium heat. Stir in the grated Parmesan cheese and Italian seasoning.
- Let the sauce cook for 3-4 minutes, stirring constantly, until it thickens. If the sauce is too thick, add the reserved pasta water a little at a time until you reach the desired consistency.
- Season with salt and pepper to taste.
Combine the pasta and steak:
- Add the cooked rotini pasta to the skillet with the garlic Parmesan sauce and toss to coat the pasta in the sauce.
- Add the cooked steak bites back into the skillet and stir to combine, heating through for 2-3 minutes.
Serve:
- Garnish with fresh parsley if desired, and serve immediately.
Notes
- For a leaner option, use chicken breast or shrimp in place of the steak.
- You can add vegetables like spinach, sun-dried tomatoes, or mushrooms to the sauce for added flavor and nutrition.
