Skillet Mediterranean Chicken Recipe

This recipe starts by seasoning the chicken breasts with Italian herbs, then searing them in olive oil in a heavy skillet to develop a browned exterior. After the chicken is removed, additional olive oil, garlic, and diced onion are sautéed until the onion is just tender, forming the flavor base for the sauce.
Tomato sauce and green olives are added to the skillet along with the chicken, which simmers covered until cooked through. Ingredients
- 4 chicken breast boneless, skinless
- 1 tablespoon Italian seasoning
- 4 tablespoons olive oil
- 2 cloves garlic minced
- ½ onion diced
- 2 cups tomato sauce
- 1 cup green olives pitted
Instructions
- Sprinkle both sides of the chicken generously with Italian Seasoning Mixl.
- Heat 2 tablespoons of the olive oil in a large heavy skillet over medium heat. Add the chicken, and cook for several minutes on each side until browned on both sides. Remove the chicken from the skillet onto a plate and set aside.
- Add the remaining olive oil, garlic and onion and cook until the onion is just tender, about 2 minutes. Stir in the tomato sauce and olives and return the chicken to the skillet. Cover and cook until the chicken has cooked throughout, about 15 more minutes.
