Skillet Peach Cobbler

Skillet Peach Cobbler combines fresh peeled and sliced peaches with a cinnamon-spiced dough baked in a cast iron skillet. The filling blends peaches with sugar, cinnamon, nutmeg, salt, and vanilla for a warm, fragrant fruit base. A crumbly crust made from white whole wheat and all-purpose flour with cold butter creates a tender, buttery topping. Baking the cobbler in a skillet encourages a rustic, golden crust with folded edges enclosing the juicy peach filling. It’s a balanced dessert highlighting ripe peach sweetness and the comforting texture of a biscuit-like crust.

Description

The Skillet Peach Cobbler is a dessert featuring a juicy, spiced peach filling set beneath a tender crust made from a mix of whole wheat and all-purpose flours. The filling includes peaches tossed with sugar, cinnamon, nutmeg, salt, and vanilla extract, contributing a layered flavor profile with mild warmth and a hint of aromatic spice. The dough combines flour, sugar, baking powder, cinnamon, salt, and cold cubed butter, which is worked in to create a texture similar to breadcrumbs before adding milk to bind the dough. Rolled out to about a quarter-inch thickness, the crust is placed in a prepared 8-inch cast iron skillet, with edges folded over the filling to partially cover the peaches, allowing the fruit to bubble through during baking.

Baking at a high temperature ensures the crust becomes golden brown and crisp along the edges while the interior remains tender. The balance between the sweet, soft peach filling and the cinnamon-scented crust gives this cobbler its character. This skillet method emphasizes a homey presentation, with a rustic crust and bubbling fruit.

This cobbler can be served warm, alone or with accompaniments like ice cream or whipped cream. The notes suggest adjusting the sugar in the filling based on the sweetness of the peaches and adding a thickener like cornstarch if peaches are very ripe to manage the filling’s consistency.

Ingredients

Servings

Crust

  • 1/2 cup white whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons butter cut into small cubes, cold unsalted
  • 1/3 - 1/2 cup milk low fat

Filling

  • 6 peach approximately 3 cups peeled and sliced
  • 1/3 cup granulated sugar
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch salt
  • 1/2 teaspoon vanilla extract

Instructions

Filling

  1. In a large bowl combine the all of the ingredients for the filling and stir together gently until combined. Set aside while you make the crust.

Crust

  1. Preheat oven to 425° F. Spray an 8 inch cast iron skillet with cooking spray or brush with melted butter.
  2. In a medium sized bowl combine the flours, sugar, baking powder, cinnamon and salt. Add in the cold cubes of butter and work them into the flour with your fingers or a pastry cutter until everything comes together and resembles breadcrumbs.
  3. Start with 1/3 cup of milk and pour it into the mixture stirring together quickly and gently until the dough comes together. If the mixture seems dry and won't come together, drizzle in more milk until it does.
  4. On a lightly floured surface, roll or pat the dough out until it's about 1/4 inch thick. Place it into the prepared skillet allowing the dough to hang over the edges.
  5. Fill the crust with the peach mixture and fold the hanging dough towards the center leaving the middle uncovered. Brush the crust with milk and sprinkle with sugar. Bake for 25-30 minutes or until the crust is golden brown. Cool for 10 minutes before serving with vanilla ice cream or whipped cream.

Notes

  • If using very ripe peaches, add 1 to 2 teaspoons of cornstarch or arrowroot powder to the filling to help thicken the juices.
  • Adjust sugar amounts in the filling based on peach sweetness by adding 1 to 2 extra tablespoons if desired.
