This skinny 4-ingredient Bacardi pina colada recipe is perfectly sweet, refined sugar-free, and made with light coconut milk. The perfect tropical summer drink. No pineapple juice is required!

Ingredients
- 1 cup frozen pineapple chunks fresh or store-bought
- 2 ounces Bacardi rum (about ¼ cup)
- ¼ - ⅓ cup light canned coconut milk shake it before measuring
- ½ ounce fresh lime juice (about 1 tbsp)
- ¼ cup Ice cubes crushed is best but cubes work
- Fresh pineapple pieces for garnish
Instructions
- Add all ingredients to a high-speed blender. Start with ¼ cup of canned coconut milk, you can always add more if you want your pina colada to be thinner.
- Blend until smooth and creamy. For a thinner pina colada, add more coconut milk. For a thicker pina colada, add a bit more frozen pineapple chunks or a few ice cubes.
- Pour into a glass and enjoy!
Notes
- Light Coconut Milk: Feel free to substitute light coconut milk with full-fat coconut milk.
- Fresh Pineapple: You can use fresh pineapple if you are in a rush and don’t have time to freeze it. If you do this, you will need to add more crushed ice, and the pina colada will be a little “icier.” For the best results, freeze fresh pineapple chunks for a few hours before making this skinny pina colada.
- Dairy-Free & Gluten-Free & Vegan: this pina colada recipe is 100% dairy-free, vegan, and gluten-free.
- Doubling or Tripling Recipe: You can easily double or triple this recipe. Simply follow the same instructions and make sure your blender is big enough to hold all the ingredients. You can need to blend in batches.
- Virgin: Omit the rum and add ¼ cup more coconut milk.
