Skinny Fettuccine Alfredo
Description
This recipe starts by sautéing garlic in butter and then forming a roux with flour. Chicken broth and milk are gradually whisked in and simmered until the sauce thickens. Parmesan cheese is stirred in off the heat to add richness and umami flavor. Salt and pepper season the sauce, keeping it simple and balanced.
Meanwhile, fettuccine noodles cook in salted boiling water until al dente, then drain and toss directly into the sauce. This allows the noodles to absorb the creamy sauce without overwhelming heaviness. Chopped fresh parsley sprinkled on top refreshes the dish visually and adds herbal notes.
This lighter Alfredo sauce makes a comforting pasta dish that can be served as a main course or paired with vegetables or a salad for a complete meal. The absence of cream lowers fat content while maintaining a smooth texture.
Ingredients
- 1 Tbsp butter light
- 2 garlic minced, cloves
- 2 Tbsp all-purpose flour
- 1 cup chicken broth or vegetable broth, 240g
- 1 cup milk fat-free, 240g
- 3/4 cup Parmesan Cheese grated or shaved, fresh
- 1/2 tsp salt
- 1/3 tsp black pepper
- 12- oz. Fettuccine pasta
- 1 tsp salt for pasta
- parsley chopped, for serving, fresh
Instructions
- Spray a large skillet with nonstick cooking spray and set to medium heat. Add butter and garlic and stir; let simmer for one minute. Add flour and stir quickly to form a pasta. Then immediately after, stir in chicken broth and whisk until there are no lumps.
- Whisk in milk. Let simmer for 6-8 minutes or until it starts to thicken.
- Turn heat to medium-low and add parmesan cheese, salt and pepper. Stir, then remove from heat and let thicken for a few minutes. Taste and add more salt, if needed.
- Place water in a large pot and bring to boil and add salt. When it is at a rolling boil, add fettuccine. Stir occasionally so the noodles don't stick to each other. Cook for about 10 minutes, until the noodles are al dente (they are best when not overcooked).
- Drain the fettuccine then add to the Alfredo sauce; toss around until the noodles are evenly covered. Serve up in a bowl and top with fresh parsley and parmesan cheese!
