Skinny Funfetti Cake

The Skinny Funfetti Cake uses a boxed Funfetti mix combined with Greek yogurt and water to create a lighter cake with moist crumb. It’s baked in a sheet pan and topped with a sugar-free vanilla pudding-based frosting folded with whipped topping. The cake presents colorful sprinkles inside and on top, offering a festive sweet treat with reduced fat ingredients.

Description

This cake preparation starts with mixing a Funfetti cake mix with fat-free vanilla Greek yogurt and water, producing a smooth batter. Baking in a 13x10 inch pan yields a moist, tender crumb. The frosting blends sugar-free instant vanilla pudding with skim milk and vanilla extract, thickened before folding in fat-free whipped topping to create a light, creamy topping. The assembled cake is frosted once cooled and optionally garnished with sprinkles for a celebratory look.

The use of Greek yogurt and sugar-free pudding mix reduces fat and sugar content compared to traditional funfetti cakes. The fun sprinkles embedded in the batter add bursts of color and subtle sweetness. This cake is suitable for serving at casual celebrations or as a dessert with moderate indulgence.
