Skinny Rice Krispies Treats

Skinny Rice Krispies Treats are made by melting butter and mini marshmallows together, then stirring in crispy rice cereal to coat the grains. The mixture is pressed into a pan, cooled, and cut into bars with a chewy, sweet texture and familiar marshmallow flavor but made with lighter butter spread.

Description

The recipe starts by melting a butter spread in a saucepan on low heat and gently melting the mini marshmallows into it without burning. The melted marshmallow mixture is then combined with Rice Krispies cereal quickly before it cools and stiffens, ensuring even coating and binding. The mixture is pressed into a prepared pan, typically with wax paper for easier removal, then cut into squares once set.

Since it uses a lighter butter spread, these treats may have a slightly different fat content but retain the classic chewy texture and sweetness characteristic of traditional Rice Krispies treats. The recipe emphasizes working quickly at the mixing stage to prevent the marshmallows from hardening prematurely.
