Instructions
- Peel and dice your butternut squash, onion, and carrots. Load into the slow cooker with all the seasonings apart from 1tsp of garam masala. Mix your vegetables well with your hands so that the dry seasonings are well rubbed into the vegetables.
- Place your chicken breasts on top of the veggies and season with the remainder of the garam masala. Place the lid on your slow cooker and cook for 4 hours on high for shredded chicken or 3 hours on high for cubed chicken.
- Then remove the chicken with a spatula and put to one side.
- Use a hand blender to blend the vegetables until smooth.
- Either dice or shred the chicken and stir into the butter chicken curry sauce.
- Serve with your favourite sides.
Notes
- Tomatoes. An authentic butter chicken is cooked with tomatoes, but you will notice in this butter chicken recipe there are no tomatoes. That is because when you use tomatoes you need a lot of cream and other ingredients to make it thick and creamy. If you would rather have tomatoes I recommend halving the carrots and replacing them with some tomatoes.
- Freezer. Load into freezer containers once cool. Then freeze for up to 3 months. Then defrost before reheating and you can also reheat in the slow cooker.
- Quinoa. I am a huge fan of quinoa and it’s a great lighter alternative to white rice. I recommend you follow our instant pot quinoa recipe and serve it with your butter chicken.
- Thanks for reading our slow cooker butter chicken recipe on Recipe This. We have many more slow cooker recipes for you to check out next. Though if you love butternut squash, then I recommend you try our slimming world cheese sauce.
