- 2 chicken breast large
- 1 white onion medium
- 200 g butternut squash
- 6 carrot medium
- 400 ml White beans canned
- 400 ml canned tomatoes
- 2 Tsp parsley
- 2 Tsp thyme
- 2 Tsp oregano

Instructions
- Peel and slice your butternut squash, carrots, and onion. Load into the slow cooker.
- Dice your chicken breast and add to the slow cooker your chicken breasts, drained white beans, tinned tomatoes or tomato sauce and seasonings. Mix well and place the lid on your slow cooker. Cook for 4 hours on high or 7 hours on low.
- Remove the lid and use a hand blender to blend about 20% of the ingredients and then stir. This will create a creamy chicken casserole. If you want to bulk up the chicken casserole stir in frozen sweetcorn and frozen peas.
- Serve with brown rice or mashed potatoes.
