Slimming World Pea & Mint Soup. A delicious, easy, quick, pea and mint soup made with frozen peas. Just dump all the ingredients into the soup maker and you have an effortless creamy pea soup.

- Soup Maker
Slimming World Pea & Mint Soup Ingredients:
- ½ garlic bulb
- 1 kg frozen green peas
- 600 ml vegetable stock
- 1 Tsp thyme
- 1 Tbsp fresh mint
- salt & pepper
Instructions
- Peel your garlic cloves and chop them in half, chop your fresh mint and give it a clean.
- Place in the soup maker with everything else. Place on the chunky soup setting for 30 minutes and then after 15 minutes turn off the soup maker.
- Blend your pea soup, stir in fat free yoghurt of choice, and serve.
Notes
- Garlic. No need to mince your garlic, your soup maker will blend your soup and do the garlic as it blends. Saves you a garlic mincing job!
- Stock. I often have some stock left in the freezer from another soup, if you don’t just mix water with extra mint, thyme and rosemary.
