Sloppy Joe Baked Potato

Sloppy Joe Baked Potatoes are perfectly baked russet potatoes hollowed out and stuffed with a sloppy joe mixture topped with shredded cheese.

Ingredients
Baked Potatoes
- 8 large Russet potatoes
- 1 tablespoon canola oil
- 1 teaspoon kosher salt
Sloppy Joe Mixture
- 1 pound ground beef
- ¼ cup chopped onion
- ½ teaspoon garlic powder
- 1 teaspoon yellow mustard
- ¾ cup ketchup
- 1 tablespoon brown sugar
- ½ cup water
- Salt and pepper, to taste
Toppings
- 1 cup cheddar cheese, shredded and divided
- ½ cup sour cream
- 2-3 green onions, diced
Instructions
- Preheat the oven to 400°F.
Baked Potatoes
- Wash each potato and pierce a couple of holes on each side with a sharp knife or fork.
- Coat each potato with canola oil and salt and bake for 1 hour. (Potatoes should be fork-tender when done.)
- Set potatoes aside to cool slightly.
Sloppy Joe Mixture
- In a medium skillet over medium heat, cook the ground beef and onions until the beef is no longer pink. Drain.
- Stir in the garlic powder, mustard, ketchup, brown sugar, and water, mixing until combined. Add salt and pepper, to taste.
Assembly
- Using a sharp knife, slice the top off of each potato.
- Remove a scoop of potato out of each one and place it in a small bowl. (You will have a total of about ½ cup potato.)
- Mash the scoops of potatoes and add them to the sloppy joe mixture. Mix to combine.
- Top the baked potatoes with equal amounts of sloppy joe mixture and shredded cheese. Broil for 1-2 minutes, watching carefully, until the cheese is melted.
- Served topped with sour cream and green onion.
