Slow Cooker African Peanut Stew
Description
This African Peanut Stew features beef browned for a savory base, combined with softened onions and bell peppers to build flavor and texture. The peanut butter sauce includes peanut butter, tomato, tomato puree, fresh ginger, garlic, Scotch bonnet chili, coriander, pepper, and a stock cube, blending savory, nutty, spicy, and aromatic elements.
Slow cooking the stew allows flavors to meld and beef to become tender over about 4 to 5 hours. The rich peanut sauce coats the ingredients creating a creamy consistency with a balance of spice and sweetness. Serving the stew with rice makes a filling, balanced meal.
Allowing the stew to rest overnight enhances the flavor development, making it a suitable dish to prepare ahead. Adjusting cooking time by an hour can help reach optimal tenderness.
Ingredients
- peanut stew sauce
- 500 ml (2 cups) water
- 400 g (14oz) tomato chopped
- 5 tbsp peanut butter smooth
- 3 tbsp tomato puree
- 2 cm fresh ginger peeled piece
- 2 garlic peeled, cloves
- Scotch bonnet chili or other chilli, to your taste
- 1 tsp ground coriander
- 1/2 tsp white pepper
- 1 stock cube
- Everything else
- 2 tbsp peanut oil divided
- 450 g (1lb) beef cubed small
- 1 onion peeled and finely diced
- 2 red pepper bell, deseeded and finely diced
Instructions
- Add 1 tbsp of olive oil to a frying pan over medium heat and brown the meat on all sides in batches. Add the browned meat into the slow cooker.
- Add the remaining 1 tbsp. of oil to the frying pan and add the onion and peppers and cook for 5 mins until the onions are softened. Add the onion and pepper mix into the slow cooker.
- Stir in the peanut butter sauce, mix well and cook on high for 4 hours.
- Check after 4 hrs, and if you need a little more time then cook for a further hr.
- Adjust seasoning then serve with some rice
Notes
- The stew’s flavors improve after resting overnight, making it ideal for preparing a day ahead.
- Adjust slow cooker time as needed, cooking an additional hour if meat tenderness requires it.
