Slow Cooker Asian Short Ribs
Description
This recipe features beef short ribs simmered slowly in a blend of reduced-sodium soy sauce, beef broth, brown sugar, minced garlic, freshly grated ginger, and toasted sesame oil. The marinade is combined in a slow cooker with the ribs, allowing them to cook on low for 7-8 hours (or high for 3-4 hours), resulting in tender, fall-off-the-bone meat fully infused with the flavorful Asian-style sauce. Optional crushed red pepper flakes add spice depth according to preference.
Once cooked, the sauce is thickened by stirring in a cornstarch slurry and cooking on high for 30 more minutes until glossy and slightly reduced. The ribs are served garnished with fresh chopped parsley and toasted sesame seeds, which add a fresh herbal note and subtle nuttiness to the rich meat.
This dish pairs well with steamed rice or vegetables and is ideal for hands-off preparation. The ribs can be tested for doneness by checking if the bones pull out easily.
Ingredients
- ½ cup soy sauce reduced sodium
- ½ cup beef broth
- ¼ cup brown sugar packed
- 3 cloves garlic minced
- 1 tablespoon ginger freshly grated
- 1 teaspoon sesame oil
- 1 teaspoon red pepper flakes optional, crushed
- 4 pounds beef short ribs
- 2 tablespoons cornstarch
- 2 tablespoons parsley chopped fresh leaves
- 1 teaspoon sesame seeds
Instructions
- In a large bowl, whisk together soy sauce, beef broth, brown sugar, garlic, ginger, sesame oil and red pepper flakes, if using.
- Place short ribs into a 6-qt slow cooker. Stir in soy sauce mixture until well combined.
- Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.*
- In a small bowl, whisk together cornstarch and 1/4 cup water. Stir in mixture into the slow cooker. Cover and cook on high heat for an additional 30 minutes, or until the sauce has thickened.
- Serve immediately, garnished with parsley and sesame seeds, if desired.
Notes
- Test ribs for doneness by gently pulling on a bone; it should slide out easily when fully cooked.
