Slow Cooker Balsamic Beef

  • 2 lb. beef roast, cut into chunks See the "notes" in post regarding different roast types.
  • 1 yellow onion sliced
  • 4 garlic cloves minced
  • 1 14.5 oz can beef broth
  • 3 tbsp balsamic vinegar
  • 1-2 bay leaves
  • 1 tsp. dried thyme
  • salt & black pepper to taste

Instructions

  1. Brown all sides of the meat in a hot pan, then add it to a slow cooker. Top meat with onion, garlic, balsamic vinegar, bay leaf, thyme, and salt & pepper. Pour beef broth over everything and cook on high for 4 hours or low for 7-8 hours or until tender. Serve over mashed potatoes or your favorite starchy side. Enjoy!
