Slow Cooker Beef and Broccoli

Slow Cooker Beef and Broccoli- better than take-out, beef and broccoli only takes 10 minutes from fridge to slow cooker.

Ingredients

  • 2-3 pounds chuck roast beef , fat trimmed
  • 1 white onion , sliced
  • 2 cups beef broth low-sodium
  • 1 cup soy sauce low-sodium
  • 2/3 cup light brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon apple cider vinegar
  • 3-4 teaspoons garlic , minced
  • 3-4 teaspoons ginger grated, fresh
  • 12 ounces broccoli florets frozen, in bag
  • 1 tablespoon sesame seeds , toasted and optional
  • 4 tablespoons cornstarch
  • 1/4 cup scallions , sliced for garnish
  • 4 cups rice

Instructions

  1. Slice the beef into 1/2 inch strips against the grain.
  2. Place the in slow cooker along with the onion, beef broth, soy sauce, brown sugar, oil, vinegar, garlic and ginger . Give it a quick a stir.
  3. Place on high heat for 3 hours.
  4. Add the frozen broccoli. Spoon out 1/2 cup of liquid and whisk with the cornstarch, return to the sauce to thicken. Continue to cook for 15 minutes on low heat.
  5. Serve over preferred rice and garnish with sesame seeds and scallions, if desired.

Notes

  • If using fresh broccoli, cooking time might increase to 30 minutes.
