  • 3 lb chuck roast
  • 2 chipotle chilies in adobo
  • 1/4 cup white vinegar
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoon garlic minced
  • 1 lime squeezed, fresh
  • 1 cup beef broth

Instructions

  1. Place the roast in the slow cooker.
  2. Place all the other ingredients into a food processor and process until well combined. Pour the mixture on top of the roast in the crock pot.
  3. Cook on low for 8-10 hours or high for 5 hours (until the meat is falling apart).
  4. Shred the meat an stir back into the sauce
  5. Serve on your favorite tortillas and with your favorite toppings. Enjoy!
