Slow Cooker Beef Curry
Description
The Slow Cooker Beef Curry recipe starts with browning lean beef cubes to develop flavor, then adds finely diced onion, minced garlic, grated ginger, and red chili for aromatic depth. The seasoning includes salt, brown sugar or sweetener, curry powder, garam masala, cayenne pepper, canned tomatoes, a crumbled beef stock cube, and a cinnamon stick. Cooking on low heat for 7-8 hours or high for 5-6 hours melds the flavors and tenderizes the meat.
The sauce thickens without extra liquid, resulting in a rich, concentrated curry. The combination of spices balances warmth and mild heat, with the cinnamon providing subtle sweetness and complexity. The beef becomes very tender, absorbing the fragrant sauce, and the dish finishes with fresh cilantro and an optional pinch of red pepper flakes to adjust heat.
This curry can be served over rice, cauliflower rice, or mashed potatoes, offering versatility to fit various meal preferences. Steamed vegetables like spinach or green beans complement the dish. The slow cooker method allows for hands-off preparation with deep, developed flavors.
Practical notes suggest skipping browning if pressed for time, as the curry still tastes good. For more heat, choose hot curry powders or add whole chilies. The recipe is adaptable for low-calorie diets by trimming fat and substituting sugar with sweeteners. Additional options include stirring in fat-free yogurt or coconut milk at the end for creaminess.
Ingredients
- cooking spray or olive oil, low calorie
- 2 lb lean beef cubed, 950g
- 1 onion finely diced, large
- 3 garlic minced, cloves
- 2 tsp ginger or use ginger paste from a tube, fresh grated
- 1 red chili , seeds removed, finely diced
- 1 tsp salt
- 1 tbsp brown sugar or Sukrin Gold sweetener
- 2 tsp curry powder or use hot if preferred, mild
- 2 tsp garam masala
- ½ tsp cayenne pepper or mild chilli powder
- 15 oz canned tomatoes 400g
- 1 beef stock cube crumbled
- 1 cinnamon stick
- cilantro coriander), roughly chopped, fresh
- Pinch red pepper flakes to serve, dried
Instructions
- Brown the beef either in a frying pan or directly in your slow cooker if it allows for searing. Mist the pan with cooking spray and brown the beef over high heat, in batches, until nicely browned.
- Add all the remaining ingredients – onions, garlic, ginger, chili, spices, salt, tomatoes, stock cube and cinnamon stick. Stir to combine.
- Cover your slow cooker and cook on LOW for 7-8 hours or HIGH for 5-6.
- Remove and discard the cinnamon stick. Give your curry a good stir and check the seasoning, adding salt and pepper if needed.
- Serve over rice, cauliflower rice, or mashed potatoes (I know, not very authentic but so delicious!). Add some steamed spinach or green beans on the side and enjoy!
Notes
- Browning beef adds flavor but can be skipped for convenience.
- No extra liquid is added; the sauce thickens naturally for a rich texture.
- Choose curry powder heat level to adjust spiciness; whole chili can add more heat.
- Trimming fat and using sweetener keeps the dish low in calories.
- Serve with fat-free yogurt or add coconut milk at the end for creamier texture.
- Suitable for slow cooking with minimal hands-on time.
