Slow Cooker Beef Fajitas
Description
This slow cooker recipe starts by layering beef strips along with fresh sliced bell peppers, julienned carrot, and optionally sweet onion into a crock pot. Tomato sauce and broth are poured over to provide moisture and a saucy base for the fajita ingredients. A homemade seasoning blend of chili powder, cumin, paprika, garlic powder, and salt is sprinkled evenly for balanced spice and flavor.
The mixture is combined and cooked on low heat for around 8 hours, allowing the beef to become tender and the vegetables to soften while absorbing the spices. This method suits various cuts of beef, including stir fry strips or flank steak cut into strips, adapting to the slow heat by time adjustments depending on slow cooker size and capacity.
Once ready, the beef and vegetables can be served as fajita fillings alongside tortillas or as components in other dishes. The well-spiced, juicy meat and softened peppers provide a classic Tex-Mex profile with the convenience of hands-off cooking in the slow cooker.
Different broth types may be used according to taste or nutritional preferences; bone broth powder is one recommended option to enhance flavor and add nutrients. Moisture retention and steam release during cooking do not require a sealed lid, making the process forgiving.
Ingredients
- 1.2 kg beef for stir fry
- 2 bell pepper sliced
- 1 carrot jullienned
- ½ sweet onion optional
- 200 mL tomato sauce
- ¼ cup broth
- 1 tbs chili powder
- 1.5 tbs cumin
- ½ teaspoon paprika
- 1 teaspoon salt
- 2 teaspoon garlic powder
Instructions
- Slice the bell peppers and julienne the carrot.
- Place the steak and veggies into the slow cooker.
- Pour the broth and tomato sauce over top.
- Mix the homemade fajita seasoning and sprinkle it on.
- Mix all the ingredients together and turn to low for 8 hours.
Notes
- Almost any beef cut can be used; common options include stir fry strips or flank steak cut into strips.
- It is fine if the slow cooker lid allows some steam to escape; sealing tightly is not necessary.
- Cooking time varies with slow cooker size; smaller cookers often need longer, while larger ones may require less time.
- Bone broth powder can be used as broth for extra flavor and nutritional boost, but any broth type is suitable.
