Slow Cooker Beef Massaman Curry
Description
This recipe starts by coating diced beef with plain flour to help thicken the curry sauce during slow cooking. The beef, potatoes, and shallots are placed in the slow cooker and combined with a curry sauce made from beef stock, coconut cream, Massaman paste, fish sauce, brown sugar, and lime juice. The curry uses Massaman paste, which delivers a mildly spiced, slightly sweet, and nutty flavor profile typical of this Thai dish.
Cooking the curry for 8 hours on low allows the beef to become very tender and infuses the potatoes with the sauce's rich flavors. The accompanying rice absorbs the curry sauce well, while chopped cashews add crunch and cilantro contributes fresh herbal notes.
For consistency, cut potatoes and beef to similar sizes and place potatoes at the bottom of the slow cooker to ensure even cooking. Optionally, sprinkle red chili flakes for extra heat. Sweet potato can replace regular potatoes for a softer texture, and cooked lentils can be added to stretch the dish without sacrificing protein content.
Ingredients
- 400 g beef diced
- 2 tablespoon plain flour (all purpose)
- 250 ml beef stock
- 100 g Massaman paste
- 200 g coconut cream
- 1 tablespoon fish sauce
- 1 teaspoon brown sugar
- 1 lime juice only
- 200 g potato diced
- 2 shallot diced
To serve:
- rice
- cashews chopped
- cilantro chopped, fresh
Instructions
- Add 2 tablespoon Plain flour to 400 g Beef and mix well to coat. Once fully coated, set aside.
- In a mixing bowl, add 250 ml Beef stock, 200 g Coconut cream, 100 g Massaman paste, 1 tablespoon Fish sauce, 1 teaspoon Brown sugar and the juice of 1 Lime. Mix well.
- Add 200 g Potatoes, 2 Shallots and coated beef to your slow cooker.
- Pour in the massaman sauce.
- Cook on low for 8 hours.
- Serve with Rice, Cashews and Fresh coriander (cilantro).
Notes
- Sprinkle red chili flakes over the curry for added spice if desired.
- Sweet potatoes can be substituted for regular potatoes but may become mushier.
- Including cooked lentils helps bulk up the meal and reduces the required meat amount.
- Cut potatoes and beef into similar sizes to ensure even cooking.
- Place potatoes at the bottom of the slow cooker to ensure they cook properly without stirring once sauce is added.
