Description
This soup starts by combining chopped broccoli and cauliflower florets with diced carrot, minced garlic, and yellow onion in a slow cooker. Seasoned with salt, pepper, and optional hot sauce, plus low-sodium vegetable or chicken broth, it simmers on low for 6 to 8 hours until the vegetables are very tender. An immersion blender or countertop blender is then used to purée the soup until smooth.
After blending, milk and sharp white cheddar cheese are added, blending again until the cheese melts into the soup for a rich and creamy consistency. Finally, plain Greek yogurt is stirred in to add smoothness and a subtle tang. The soup is tasted and adjusted for seasoning before serving.

Ingredients
- 3 cups broccoli chopped, florets
- 2 cups cauliflower chopped, florets
- 2 cloves garlic minced
- 1/2 cup yellow onion diced
- 1 carrot diced, large
- 3 1/2 cups vegetable broth low sodium, or chicken broth
- kosher salt black pepper and hot sauce to taste
- 1 cup milk low fat
- 6 ounces cheddar cheese shredded, extra sharp, white
- 1 cup Greek yogurt 2% or whole may also be used, plain, non-fat
Instructions
- Place the broccoli, cauliflower, carrot, shallot, garlic, salt, pepper, hot sauce and vegetable or chicken broth in the slow cooker. Stir everything together then cover with the lid and set to low. Cook for 6-8 hours or until the vegetables are very tender.
- Use an immersion stick blender or regular blender to purée the soup until it's smooth. Add in the milk and cheese and blend until the cheese is melted and everything is combined. Blend in the Greek yogurt until combined and the soup is smooth. Taste for seasoning then serve.
