Slow Cooker Chicken Adobo

Slow Cooker Chicken Adobo features bone-in chicken simmered in a tangy mix of soy sauce and white vinegar, enhanced with aromatic onion, garlic, and bay leaves. The slow cooking method tenderizes the chicken while developing a rich, savory sauce spiked with black pepper and finished with fresh cilantro. This hearty dish works well served over rice to soak up the flavorful sauce.

Description

Slow Cooker Chicken Adobo combines 3 pounds of optionally skin-on bone-in chicken with a marinade of soy sauce and white vinegar, imparting its characteristic tang and depth. The sliced onion and chopped garlic are layered on top with bay leaves and black pepper, then slow-cooked on low heat for 4 to 6 hours until the chicken is tender and infused with the savory sauce. The method starts with browning the chicken to develop flavor and deglazing the pan to incorporate all the browned bits into the sauce.

The finished dish features tender chicken pieces in a richly flavored, lightly acidic sauce with umami from the soy. Garnishing with cilantro adds a fresh herbal note. Commonly served over rice or a preferred starch, the sauce enhances the accompaniment and absorbs well.

This adobo recipe offers a straightforward way to produce tender, deeply flavored chicken with minimal active cooking time thanks to the slow cooker. The layering of simple ingredients allows the chicken to develop a complex savory and tangy profile during slow cooking, making it suitable for a comforting meal.
