Slow Cooker Chicken Cacciatore

Slow Cooker Chicken Cacciatore uses boneless, skinless chicken thighs simmered in a tomato-based sauce with bell peppers, mushrooms, herbs, and garlic. The slow cooking tenderizes the chicken while infusing the sauce with savory and slightly spicy flavors, finished with capers and fresh parsley. This hearty dish pairs well with pasta or rice and benefits from gentle seasoning adjustments during cooking.

Description

In this Slow Cooker Chicken Cacciatore, seasoned chicken thighs are layered with sautéed onions, bell peppers, garlic, crushed tomatoes, chicken broth, and dried herbs. The mixture cooks slowly for several hours, allowing the flavors to meld and the chicken to become tender. Mushrooms contribute earthiness, while optional red pepper flakes add mild heat. Near the end of cooking, capers introduce a tangy briny note, balancing the tomato sauce.

The resulting dish has tender, juicy chicken and a rich sauce perfect for serving over pasta, rice, or mashed potatoes. Its texture is soft with slightly chunky vegetables, and the herbs provide an aromatic base without overpowering the ingredients.

If the sauce tastes too acidic, a small amount of sugar can be added to balance it. Cooking times may vary with different slow cookers, so checking doneness after about four hours is advisable. The dish freezes well once cooled, making it convenient for meal prep and quick reheating. Serving options include low-carb bases such as cauliflower rice or zucchini noodles for variety.

  • 2 tablespoons olive oil
  • 1 large onion sliced
  • 2 medium bell pepper sliced, any color
  • 3 cloves garlic minced
  • 28 ounces crushed tomatoes 1 can
  • ½ cup chicken broth low sodium
  • 1 teaspoon oregano dried
  • 1 teaspoon basil dried
  • ½ teaspoon red pepper flakes optional
  • 8 ounces mushroom sliced
  • ¼ cup capers drained
  • parsley chopped, fresh

Instructions

  1. Season the chicken thighs with salt and pepper on both sides and add it to the slow cooker.
  2. Add the olive oil, onion, bell peppers, garlic, crushed tomatoes, chicken broth, dried oregano, dried basil, red pepper flakes and mushrooms to the slow cooker. Gently toss.
  3. Cover and cook on low for 4-6 hours, or until the chicken is tender and cooked through.
  4. About 30 minutes before serving, add the capers (if using) to the slow cooker. Stir to combine.
  5. Taste and adjust seasoning if necessary. Serve the chicken cacciatore garnished with fresh parsley. Serve over pasta or rice.

Notes

  • Adjust sauce acidity by adding a little sugar gradually if the tomato sauce is too tart.
  • Start checking chicken doneness at around 4 hours since slow cooker times can vary by model.
  • This dish can be frozen in airtight containers once cooled and reheated gently on stovetop or microwave.
  • Serve over pasta, rice, mashed potatoes, or for a low-carb option, cauliflower rice or zucchini noodles.
