- 650 g chicken breast
- 3 bell pepper
- 1 red onion large
- 3 garlic crushed, clove
- 4 tablespoon fajita seasoning
- 400 g tomato canned, chopped
- 0.5 lime (juice only)

Instructions
- Put 3 Bell peppers and 1 Red onion in the slow cooker.
- Add 650 g Chicken breast on top.
- Sprinkle over 4 tablespoon Fajita seasoning.
- Add 400 g Chopped tomatoes, 3 Garlic clove, and juice of 0.5 Lime. Cook on high for 3 hours.
- Once cooked, remove the chicken breasts and chop. Put the chicken back into the sauce and cook for an extra 15 minutes.
- Serve in Tortilla wraps with Guacamole, Salsa, Sour cream and Cheese.
Notes
- Use frozen onions or pre-crushed garlic to save prep time.
- Add bell peppers about 45 minutes before finishing if you prefer them with a crunch.
- Stir in fresh chopped coriander to add brightness before serving.
- If the sauce tastes too acidic from lime and tomatoes, adding a little honey can mellow it.
