For the Chicken:

  • 2 lbs. chicken thigh boneless, skinless
  • 1 red onion divided, sliced
  • 2 carrot peeled and sliced, large
  • 1 lemon freshly squeezed
  • 1 teaspoon oregano dried
  • 1 teaspoon basil dried
  • 1 teaspoon thyme dried
  • 1 teaspoon garlic minced
  • 1 cup chicken broth

For the Tzatziki Sauce:

  • 1 cup yogurt plain, Greek
  • 1 cucumber
  • 1 Tablespoon dill or 2 tablespoons Fresh Dill, dried
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic minced

For Serving:

  • 6 pita bread

Instructions

For the Chicken:

  1. Place the chicken thighs, half of the red onions, sliced carrots, lemon juice, dried oregano, dried basil, dried thyme, minced garlic and chicken broth in a crock pot.
  2. Cover crock pot with lid and cook on low for 6 hours or on high for 3 hours until the chicken is easily shreddable.
  3. Shred the chicken and stir it into the ingredients in the crock pot.

For the Tzatziki:

  1. Peel and deseed the cucumber.
  2. Shred the cucumber into small pieces.
  3. Stir the cucumber in a small bowl with the remaining tzatziki ingredients until well combined.

For Serving:

  1. Serve the chicken mixture on pitas topped with the tzatziki sauce and enjoy!
