Slow Cooker Chicken Gyros
Description
This recipe makes use of boneless, skinless chicken thighs combined with half the sliced red onion, sliced carrots, lemon juice, dried oregano, basil, thyme, minced garlic, and chicken broth in a slow cooker. The mixture cooks low and slow for 6 hours or on high for 3 hours until the chicken can be shredded easily. The shredded meat is stirred back into the cooking juices and vegetables to absorb more flavor.
The accompanying tzatziki sauce is freshly prepared by peeling and deseeding a cucumber, then shredding it and mixing with Greek yogurt, dill, salt, and minced garlic to create a cooling, herbed sauce. This is served atop the chicken mixture placed on warm pita bread, offering a balanced bite of savory, tangy, and fresh tastes.
This dish works well as a casual meal and can be served with additional toppings or sides as desired. The slow cooker method yields moist, tender chicken with infused herb flavors, contrasting with the crisp freshness of the tzatziki.
