Slow Cooker Chicken Hotpot
Report
Delicious and creamy this slow cooker chicken hotpot is ideal for an easy midweek dinner for you and your family. Think of it as creamy mustard chicken meets chicken hotpot in this diet friendly version of the classic.

Ingredients
- 300 g sweet potato slices, for air fryer
- 1 l vegetable stock cube for Instant Pot
- 450 g chicken breast mini fillets
- 1 rutabaga medium; aka swede
- 2 leek medium
- 4 carrot medium
- 1 onion medium
- 350 g cream cheese Philadelphia Light brand
- 2 Tsp mustard French
- 2 Tsp parsley
- 2 Tsp basil
- 2 Tsp paprika sweet
- salt
- black pepper

Instructions
- Dice and peel your onion, swede, carrots and then slice and wash your leeks.
- Load the veggies into the slow cooker and place the chicken breast fillets on top. Sprinkle with seasonings and find a gap for your frozen veggie stock cube.
- Place the lid on the slow cooker and cook on high for 3.5 hours or on low for 6 hours.
- Stir in the Philadelphia light as well as the mustard and extra seasonings. It will become creamy and all liquid from your stock will have disappeared.
- Then decorate the top of your hotpot with your just air fried sliced sweet potatoes. Cook for an extra 30 minutes with the sliced potatoes on top before serving.
Notes
- Swaps. Don’t like mustard? Then you can swap the mustard for another favourite seasoning. Another favourite of mine is to cook with some salsa and cream cheese and this gives a Brazilian taste.
