Description
Slow Cooker Chicken Marsala combines boneless skinless chicken breasts with minced garlic, fresh mushrooms, and Marsala wine in a slow cooker. The chicken simmers gently for several hours until tender, infusing the sauce with depth and subtle sweetness from the wine. After cooking, a cornstarch slurry is stirred into the sauce and thickened over a short period, creating a silky texture that coats the chicken. The dish is enhanced by freshly chopped parsley before serving.
This recipe is versatile in serving; it's commonly paired with rice or mashed potatoes, which soak up the flavorful sauce. Mushrooms contribute earthiness to the dish but can be omitted if preferred, though they are best left in large pieces to pick out easily if disliked.

Ingredients
- 4 chicken breast boneless skinless
- salt I used about ½ teaspoon of each, to taste
- black pepper I used about ½ teaspoon of each, to taste
- 2 teaspoons garlic minced
- 1 cup mushroom sliced
- 1 cup marsala wine may sub chicken broth in a pinch, sweet, for cooking
- ½ cup water
- ¼ cup corn starch
- parsley roughly chopped, fresh
Instructions
- Lightly grease your slow cooker with nonstick spray. Season chicken with salt and pepper and place in the bottom of your slow cooker.
- Top chicken with garlic, mushrooms, and marsala wine. Cover and cook for 5-6 hours on low.
- Use a slotted spoon to transfer chicken to a plate. Whisk together water and cornstarch til dissolved, then pour into slow cooker and stir.
- Add chicken back to slow cooker, switch heat to high, cover and cook another 20-30 minutes until sauce is thickened. Taste and add salt and pepper as needed. Sprinkle with parsley and serve.
Notes
- Serve with rice or mashed potatoes to complement the rich sauce.
- If you prefer, omit mushrooms or leave them in large pieces for easy removal.
- Chicken broth can substitute Marsala wine if needed, maintaining sweetness in the dish.
