Slow Cooker Chicken Quesadillas
Description
The recipe begins with chicken breasts cooked alongside cream cheese, diced tomatoes with mild or medium heat, and diced green chiles in a slow cooker until tender. Once cooked, the chicken is shredded and mixed well with the creamy tomato and chile mixture to create a rich filling.
To assemble, cheese is sprinkled on a tortilla, topped with chicken mixture, followed by more cheese and another tortilla. The quesadillas cook in a greased pan over medium heat for a few minutes per side until the outside is golden and the cheese inside melts, binding the layers together.
These quesadillas offer a convenient and comforting meal, suitable for lunch or dinner. They can be served as slices with salsa or sour cream for dipping. The slow cooker method makes prep hands-off and ensures moist chicken.
Alternatively, quesadillas can be heated in the microwave if preferred for quicker preparation.
Ingredients
- 3-4 chicken breast boneless skinless
- 8 ounces cream cheese
- 1 ounce can diced tomatoes mild or medium, Rotel brand
- 1 ounce can diced green chiles
- 2 cups cheese shredded Mexican style
- 8-12 flour tortilla large
Instructions
- Add chicken, cream cheese, Rotel, and diced green chiles to a lightly greased slow cooker. Cover and cook on high for 2-3 hours or on low 3-4 hours.
- Remove lid from slow cooker, use 2 forks to shred chicken breasts. Stir all ingredients until creamy.
- Pre-heat a large greased pan or non-stick skillet over medium heat. Sprinkle 1 tortilla evenly with shredded cheese. Spread chicken mixture evenly on top of cheese. Sprinkle a little more cheese on top of the chicken mixture. Top with a second tortilla.
- Cook the quesadilla over medium heat for about 2 minutes on each side or until cheese is melted. (*see note) Repeat process with remaining tortillas, cheese, and chicken mixture.
- Use a sharp knife or pizza cutter to slice quesadillas into triangles. Serve warm with salsa or sour cream if desired.
Notes
- Quesadillas can alternatively be cooked in the microwave for faster preparation.
