Slow Cooker Chicken Tacos
Description
This recipe uses boneless, skinless chicken breast cooked in a slow cooker with taco seasoning and salsa, creating a moist, flavorful filling. Cooking times vary from 3-4 hours on high or 6-8 hours on low to allow the chicken to become tender enough to shred easily.
Once shredded, the chicken is combined with fresh cilantro to add brightness. The meat is spooned onto warm flour tortillas and topped with pico de gallo for fresh acidity, creamy guacamole for richness, and cooling sour cream to balance spices.
This dish fits well into casual meals or gatherings and accommodates various toppings to customize each taco. Serve immediately after assembling to maintain the best texture of the chicken and toppings.
Ingredients
- 1 1/4 lbs chicken breast boneless skinless
- 2 tablespoons taco seasoning
- 1 ounce jar salsa
- 1/4 cup cilantro chopped leaves
- 8 flour tortillas
- 1 cup Pico de Gallo homemade or store bought
- 1 cup guacamole
- 1/2 cup sour cream
Instructions
- Place the chicken breasts in a slow cooker and sprinkle the taco seasoning over the chicken. Pour the jar of salsa on top.
- Cover the slow cooker. Cook at HIGH heat for 3-4 hours or LOW heat for 6-8 hours. Shred the chicken with two forks and stir in the cilantro.
- Divide the chicken between the tortillas and top with pico de gallo, guacamole and sour cream. Serve immediately.
