Description
Slow Cooker Chicken Thighs features boneless, skinless chicken thighs seasoned simply with salt and pepper. After an optional browning step to add golden color and depth, the thighs are slow-cooked in a sauce combining garlic, ketchup, soy sauce, honey, and toasted sesame oil. This mixture balances sweet, savory, and umami notes and infuses the chicken during the low and slow cooking.
The slow cooking process allows the chicken to become tender and absorb the sauce’s flavors. Near the end, a cornstarch slurry is stirred in and cooked until the sauce thickens into a glaze that coats the chicken. Sprinkling with sesame seeds, sliced green onions, and cilantro adds texture and brightness at serving.
This dish pairs well with steamed rice or noodles and is practical for meal prep since it can be made in advance. Omitting the browning saves time, albeit with slightly less developed flavor.
Ingredients
- 6 chicken thigh boneless, skinless
- 1 tablespoon olive oil
- salt to taste
- black pepper to taste
- 2 teaspoons garlic minced
- 1/2 cup ketchup
- 1/3 cup soy sauce low sodium
- 1/4 cup honey
- 1 teaspoon sesame oil toasted
- 2 tablespoons cornstarch
- 1 tablespoon sesame seed chopped, for garnish
- 1 tablespoon cilantro chopped, for garnish
- 2 tablespoons green onions sliced
Instructions
- Heat the oil in a pan over high heat. Season the chicken thighs generously with salt and pepper on both sides.
- Cook the chicken for 4-5 minutes on each side until deep golden brown.
- Add the chicken to the slow cooker.
- NOTE: you can skip the browning process if you prefer and simply season the thighs with salt and pepper then add them to the slow cooker.
- In a small bowl, whisk together the garlic, ketchup, soy sauce, honey and sesame oil. Pour the sauce over the chicken thighs.
- Cover the slow cooker and cook on LOW for 6 hours or HIGH for 3 hours.
- In a small bowl, mix the cornstarch with 1/4 cup cold water. Add the cornstarch mixture to the slow cooker.
- Cook for 1 more hour or until sauce has just thickened. Sprinkle with sesame seeds and green onions, then serve.
