Ingredients
Slow Cooker Chicken Tinga:
- 1 lbs chicken whole
- 1 oz peeled whole tomato canned, preferably Roma
- 1 oz (115 ml) chipotle peppers in adobo sauce canned
- 1 large onion thinly sliced
- 3 cloves garlic peeled and minced
- 2 tsp thyme or 1 tbsp fresh, dried leaves
- 1 tsp basil or 3 tsp fresh, dried leaves
- 1 tsp kosher salt
- 1 tsp black pepper fresh ground
Garnishes:
- 1/2 head iceberg lettuce thinly sliced
- 1/2 lbs tomato chopped
- 1/3 cup sour cream
- 3 tbsp milk
- 1 pinch kosher salt
- 1/2 lime zest and juice
- 8 small flour tortillas
Additional (optional) garnishes:
- feta cheese crumbled, or cojita or queso fresco cheese
- cilantro chopped, fresh
- red onion thinly sliced
- jalapeño peppers sliced
- lime wedges
