  • 2 lbs. ground beef (or sub with ground turkey)
  • 1 medium onion diced (about 1 ¼ cups
  • 2 large garlic minced or pressed (about 2 teaspoons, cloves
  • 2 tablespoons chili powder
  • 1 tablespoon seasoned salt Lawry’s
  • 1 teaspoon brown sugar (or increase to 2 teaspoons for a slightly sweeter taste)
  • 1 teaspoon onion powder
  • 2 teaspoons cumin
  • 2 (15 ounce) red kidney beans drained and rinsed, or small pink beans, canned
  • 1 (28 ounce) diced tomatoes not drained, canned
  • 1 (15 ounce) corn kernels drained, can
  • 12 ounces tomato paste
  • 4 cups beef broth low-sodium
  • salt to taste
  • black pepper to taste
  • cornbread optional for serving; green onions aka chives; diced red onion

Instructions

  1. Heat about 2 teaspoons olive oil in a nonstick skillet over medium-high heat. Cook beef, onion, and garlic in the skillet until beef is no longer pink. Drain.
  2. Transfer beef mixture to a large slow cooker. Add remaining ingredients and stir to combine.
  3. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  4. Season with salt and pepper, to taste. Garnish with optional toppings.

Notes

  • To make last-minute dinner prep even faster, you can brown the ground beef, onion, and garlic in advance. Keep the cooked meat mixture in a container in the refrigerator for 1-2 days before you need to cook the chili. This is a step that you can do on the weekend so that you only have to dump the ingredients into the pot on a busy weekday.
