  • 3 lb corned beef brisket
  • 1 tablespoon pickling spice
  • 4 carrot peeled & sliced into bite sized pieces
  • 12 red potatoes cut in half, baby
  • 1 onion peeled & quartered
  • 1 bay leaf
  • 2 thyme sprigs, fresh
  • 8 oz beer
  • 2 cups water
  • 1 green cabbage cored & cut into 6 pieces, small

Instructions

  1. Sprinkle the top of the brisket with pickling spice, pressing it into the meat.
  2. Put potatoes, carrots, onion, bay leaf and thyme into the slow cooker and put the brisket on top of them
  3. Pour the water and beer over everything.
  4. Cover and cook on low 5 hours.
  5. Add the cabbage to the slow cooker, cover and cook for another hour, or until meat and vegetables are very tender.
  6. Transfer the meat to a cutting board and allow it to rest 5 to 10 minutes, before slicing across the grain.
  7. Serve with the vegetables, and dijon, or grainy mustard.

Notes

  • Omit adding pickling spice if the brisket already includes pre-packaged seasoning.
  • Adjust cooking time based on your slow cooker model, which may run hotter or cooler than this recipe's baseline.
  • The beer is optional but adds flavor; substitute with water or gluten-free beer as needed.
