Slow Cooker Corned Beef and Cabbage

Slow Cooker Corned Beef and Cabbage uses a whole brisket cooked low and slow with root vegetables and cabbage. The long cooking time tenderizes the meat and softens the potatoes and carrots, creating a comforting meal. A garlic-parsley butter finish enhances the cooked vegetables, and mustard is offered as a flavorful condiment. This recipe suits those who plan ahead for a hearty, one-pot dinner with classic Irish-American flavors.

Description

Slow Cooker Corned Beef and Cabbage features a whole corned beef brisket cooked gently in a slow cooker alongside carrots and potatoes. Cooking on low heat for several hours breaks down the brisket's connective tissue, resulting in tender slices. Adding cabbage during the final two hours lets it soften without turning to mush. The traditional seasoning packet from the corned beef is included, infusing the dish with classic pickling spices. This method avoids boiling and retains more flavor in the cooking liquid.

The recipe ends by drizzling a garlic butter made with fresh parsley over the cooked vegetables, which brightens the plate and adds richness. The sliced corned beef is served alongside the softened carrots, potatoes, and cabbage. Mustard is offered as an optional accompaniment to cut through the richness and add tang.

This dish works well for a family meal and benefits from being started early to give the beef time to develop tenderness. The note recommends low heat for best texture and suggests timing the slow cooker to have dinner ready after about 8 hours. If wanting firmer vegetables, adding them later in the cooking cycle can help retain some bite.

Ingredients

Servings
  • 1 corned beef brisket 3-5 lbs
  • 3 carrot peeled and cut into large chunks
  • 3/4 lb yellow potatoes halved, small
  • 1/2 head green cabbage cut into wedges
  • 3 tablespoons butter
  • 1 clove garlic minced
  • 1 tablespoon parsley chopped
  • salt to taste
  • black pepper to taste
  • mustard optional, grainy, for serving

Instructions

  1. Remove the corned beef from the package. Rinse with cold water and pat dry with paper towels.
  2. Place the corned beef brisket (fat side up), carrots and potatoes in a slow cooker. Add 3 cups of water to the slow cooker, plus the seasoning packet that comes in the corned beef package.
  3. Cover and cook on LOW for 6 hours.
  4. Add the cabbage on top of the corned beef and cook on LOW for another 2 hours.
  5. Remove the cabbage, corned beef, potatoes and carrots from the slow cooker. Slice the corned beef against the grain.
  6. Place the butter, garlic, parsley and salt and pepper in a small bowl. Microwave in 30 second increments or until melted.
  7. Drizzle the garlic butter over the carrots, potatoes and cabbage. Place the meat, potatoes and vegetables on a platter and serve with mustard on the side if desired.

Notes

  • Cook on low heat to keep the corned beef tender rather than tough.
  • Put the brisket in the slow cooker early in the day for dinner readiness and optimal texture.
  • Add potatoes and carrots halfway through cooking if you prefer them less soft and more firm.
