Ingredients
- 1½ pounds boneless chicken breast
- 3 peeled and diced medium carrots
- 3 diced stalks celery
- 1 diced medium onion
- 3 cloves minced garlic minced
- 6 cups low sodium chicken broth
- 1 teaspoon Italian seasoning
- 2 bay leaves
- 1 cup whole milk
- 1 cup heavy cream
- ¼ cup flour
- 2 cups refrigerated cheese tortellini
- salt and pepper to taste
- Chopped fresh parsley for garnish

Instructions
- In a 6 quart slow cooker, add 1½ pounds boneless chicken breast, 3 peeled and diced medium carrots, 3 diced stalks celery, 1 diced medium onion, 3 cloves minced garlic, 6 cups low sodium chicken broth, 1 teaspoon Italian seasoning, and 2 bay leaves. Cook on low for 4-6 hours.
- Remove the cooked chicken from the slow cooker and shred it using two forks. Place it back into the slow cooker.
- In a small bowl whisk 1 cup whole milk, 1 cup heavy cream, and ¼ cup flour. Add it to the slow cooker along with 2 cups refrigerated cheese tortellini. Cook for 15 minutes until tortellini is cooked through and soup has thickened.
- salt and pepper to taste and discard bay leaves. Serve immediately with chopped fresh parsley for garnish, if desired.
